Tips and FAQ
Boiling makes the cauliflower soft enough to blend, but roasting adds a deeper, caramelized flavor that enhances the hummus.
A food processor gives the smoothest, creamiest result. You could mash the roasted cauliflower by hand, but it will take more effort and won’t be as silky.
This recipe was developed with fresh cauliflower to allow for oven roasting. Frozen cauliflower could work in a pinch, but you’ll miss the roasted flavor unless you thaw and roast it first.

How to Serve and Store
Serve the hummus warm the day you make it, or chilled like traditional hummus. It’s excellent with pita chips, warm pita, sliced cucumbers, or a thinly sliced baguette. This recipe yields about three cups—enough to serve 6–8 people as an appetizer.
To serve, place a large scoop in a shallow bowl, drizzle a teaspoon of olive oil on top, and add a sprinkle of everything bagel seasoning. Store leftovers in a covered container in the refrigerator for up to five days.

Everything Bagel Cauliflower Hummus
All the flavor of an everything bagel topping blended into a low-carb, creamy cauliflower hummus. Oven-roasted cauliflower replaces chickpeas for a unique appetizer or dip.

Ingredients
- 2 heads cauliflower (about 4 pounds total)
- 2 tablespoons olive oil, plus 1 teaspoon for garnish
- 2 cloves garlic, crushed (about 2 teaspoons)
- 4 tablespoons tahini
- 2 tablespoons lemon juice (fresh, optional)
- ½ teaspoon salt and ½ teaspoon pepper (to taste)
- 3 tablespoons Everything Bagel Seasoning
- 1 teaspoon water (only if needed to adjust consistency)
Instructions
Prep and Bake Cauliflower
- Preheat the oven to 400°F and line a baking sheet with parchment paper. Lightly spray the parchment if desired.
- Rinse and core the cauliflower, then break into florets. Spread evenly on the prepared baking sheet. Use a pastry brush to coat the florets with 2 tablespoons of olive oil.
- Bake for 40–45 minutes, until the cauliflower is soft and edges begin to brown.
Blend Ingredients
- Place the roasted cauliflower, garlic, tahini, lemon juice (if using), salt, and pepper in a food processor. Blend until smooth and creamy. If needed, add up to 1 teaspoon water to reach desired consistency.
- Add the Everything Bagel Seasoning and pulse a few times to incorporate.
