Sloppy Joes have been a family favorite for years—an easy, comforting meal I made often when my kids were growing up. Over time I’ve tweaked the classic formula by adding flavors like Aleppo pepper and sumac to take it up a notch. The result is familiar and extra flavorful.
These sliders are perfect for entertaining. The Sloppy Joe filling can be made in advance, and you can even double the recipe and freeze a portion for another meal. They’re simple to assemble when guests arrive and always a crowd-pleaser.
Ingredients And Variations

- Ground beef
- Extra virgin olive oil
- Kosher salt
- White or yellow onion, finely chopped
- Celery stalk, finely chopped
- Red bell pepper, seeded and finely chopped
- Garlic, minced
- Smoked paprika, dry mustard, freshly ground black pepper, cayenne pepper
- Aleppo pepper and sumac (optional)
- Dark brown sugar, firmly packed
- Balsamic vinegar and apple cider vinegar
- Tomatoes with their liquid (fire-roasted if possible)

- Slider buns (regular or gluten-free), small brioche rolls, or Hawaiian rolls

Adding Aleppo pepper and sumac gives a unique, delicious touch, but they can be left out if not available. To keep the recipe gluten-free, omit the Worcestershire or use a gluten-free version and choose gluten-free buns.
How to Make Sloppy Joe Sliders


Step One: Make the Sloppy Joe Mixture
In a large Dutch oven over medium-high heat, add 1–2 teaspoons olive oil if needed and the ground beef. Season with half the salt and cook about 3 minutes, breaking up the meat. Add the chopped onion, celery, bell pepper, and garlic; cook until the meat is fully browned, about 8–10 minutes.
Reduce heat to medium and stir in the remaining salt, smoked paprika, dry mustard, black pepper, cayenne, and optional Aleppo pepper and sumac. Mix in the brown sugar and vinegars, then add the tomatoes, tomato paste, and any optional ingredients such as chipotle, Worcestershire, and hot sauce. Combine well.
Step Two: Cook Low and Slow
Transfer the mixture to a slow cooker, cover, and cook on low for about 4–6 hours, stirring every 90 minutes, until the flavors meld and the texture is to your liking. Taste along the way and adjust sugar or vinegar as needed.
Alternatively, keep the mix in the Dutch oven and cook it in a bain-marie at 250°F (place the Dutch oven in a larger roasting pan with a few inches of water) for 4–6 hours. This gentle method prevents the meat from drying out—just check and replenish the water as needed.
Step Three: Assemble and Bake the Sliders


When ready to serve, preheat the oven to 350°F. Slice the buns horizontally and place the bottom halves in a baking dish. Add a layer of cheese, spoon a generous amount of Sloppy Joe mixture over the cheese, and add another layer of cheese. Top with the bun tops and brush with melted butter.
Loosely cover the dish with foil and bake 10 minutes to melt the cheese. Remove the foil and bake an additional 5–10 minutes until the buns are golden brown. Serve the sliders warm with pickles, marinated onions, and chips.

Storage and Reheating
Let the Sloppy Joe mixture cool, then store it in an airtight container in the refrigerator for several days or freeze for longer storage. Thaw frozen portions before reheating. Warm the filling in a skillet over medium heat before assembling sliders.
Slow Cooker vs Oven
Both methods work well. A slow cooker is convenient, but cooking in a bain-marie in the oven at low temperature is my preferred method—it’s gentle and keeps the meat moist while developing deep flavor.
