Ingredients You Need

How to make the French Tarte Normande

  • Prepare the dough: combine flour, powdered sugar, almond meal and a pinch of salt in a large bowl. Add cold butter cut into small pieces and rub with your fingertips until the mixture looks sandy.
  • Add the egg and gently bring the dough together with your hands to form a ball — avoid overworking it. Wrap and chill for at least 20 minutes.
  • On a lightly floured surface (or between parchment sheets), roll the dough to 3–4 mm thick. Line a greased tart pan or ring, trim edges and prick the base with a fork. Chill the lined shell while you make the filling.
  • Preheat the oven to 180°C / 350°F.
