Ingredients

  • 1 medium avocado, ripe but not bruised
  • 4 small but fairly thick slices of bread (see notes)
  • 2–3 square slices Monterey Jack
  • 2–3 square slices Cheddar
  • 2 large pinches flaky sea salt, to taste
  • 2 large pinches cracked black pepper, to taste
  • 2 large pinches chipotle flakes (or regular chilli flakes)
  • 2 eggs, poached or fried (optional, to serve)

Instructions

  1. Prep avocado: Halve the avocado, remove the stone, peel and slice into thin strips. Set aside.
  2. Assemble sandwich: Butter one side of each bread slice. Place two slices, butter-side-down, in a cold pan. Add Monterey Jack, then arrange avocado slices on top. Season with sea salt, cracked black pepper and chipotle flakes. Top with Cheddar.
  3. Cook: Place the remaining two slices of bread on top, butter-side-up. Turn heat to medium and fry both sides until the bread is crisp and golden and the cheese is melted.
  4. Serve: Serve hot, optionally with a fried or poached egg to mop up the yolk.
