Ingredients

  • 2 lbs Boneless skinless chicken breasts, diced
  • 1 cup Brown sugar
  • 1 cup Water
  • 1/2 cup Vinegar
  • 2 tablespoons Ketchup
  • 1 tsp Soy sauce
  • A few teaspoons cornstarch mixed with water to thicken
  • 1 Bag of frozen stir-fry vegetables optional
  • 1 Cup Pineapple tidbits optional

Instructions

  • In a bowl, whisk together brown sugar, water, vinegar, ketchup, and soy sauce until smooth.
  • Stir the cornstarch paste (cornstarch mixed with a little water) into the sauce to help thicken it.
  • Place the diced chicken in the slow cooker in a single layer when possible.
  • Pour the sauce over the chicken, coating evenly.
  • Cook on low for about 6 hours, until the chicken is tender and cooked through.
  • A few minutes before serving, stir in the frozen vegetables and pineapple tidbits so they heat through without overcooking.
  • Serve the sweet and sour chicken over plain boiled rice for a comforting meal.
