Ingredients
- 2 lbs Boneless skinless chicken breasts, diced
- 1 cup Brown sugar
- 1 cup Water
- 1/2 cup Vinegar
- 2 tablespoons Ketchup
- 1 tsp Soy sauce
- A few teaspoons cornstarch mixed with water to thicken
- 1 Bag of frozen stir-fry vegetables optional
- 1 Cup Pineapple tidbits optional

In a bowl, whisk together brown sugar, water, vinegar, ketchup, and soy sauce until smooth.

Stir the cornstarch paste (cornstarch mixed with a little water) into the sauce to help thicken it.

Place the diced chicken in the slow cooker in a single layer when possible.

Pour the sauce over the chicken, coating evenly.

Cook on low for about 6 hours, until the chicken is tender and cooked through.
