Tomatoes are at their peak—ripe, sweet and juicy—and I can’t get enough of them. With mint growing in the garden, I’ve been making this bright tomato and mint salad almost every day, sometimes twice—at lunch and again at dinner.
If you want a simple way to celebrate summer tomatoes, try this quick tomato salad. It takes 5–10 minutes to prepare and works as a side for meat, fish, rice, feta or legumes. It’s fresh, healthy and flexible.

Tomato Salad Recipe
Lately I’ve had more tomatoes than I know what to do with. We’re happily overwhelmed—my little boy eats tomatoes more readily than most other fresh vegetables, and even my husband, who often removes veggies from his burger, has become a fan.
They’re fantastic, but like avocados, they don’t last long—use them quickly. Besides making large batches of tomato sauce to freeze, I make a variety of simple tomato salads. This tomato-and-mint version is one of the easiest and most refreshing.
If you love mint, this salad will be a favorite. It’s ideal when you have many ripe tomatoes to use up: bright, healthy and effortless.

How To Make Tomato Salad
This salad couldn’t be simpler. If you can wash and chop, you can make it. Follow these steps:
- wash the tomatoes and mint
- peel the onion
- chop the vegetables
- combine everything in a bowl
- drizzle with olive oil, season with salt, and garnish
You can add a splash of lemon juice if you like, though ripe tomatoes often provide enough acidity on their own. The whole process takes about 10 minutes and leaves minimal cleanup.
Tomato Mint Salad Ingredients

Tomatoes. Choose fresh, ripe and juicy tomatoes—this salad shines when the fruit is at its best.
Mint. Mint lifts the flavor and adds a bright, cooling note that pairs perfectly with tomatoes.
Sesame seeds. Lightly toasting sesame seeds brings a warm, nutty flavor—an optional but delicious addition.
Onion. A small onion adds bite and balance; slice or chop to your preference.
Olive oil. A simple drizzle of good olive oil finishes the salad without masking the fresh ingredients.
Salad Variations
This recipe is very adaptable. Try any of these ideas:
- sprinkle crumbled feta for a salty, creamy contrast
- add chopped olives for extra brine
- use mint instead of—or alongside—basil for a different herb note
- toss in arugula for peppery greens and extra nutrients
Feel free to use what you have on hand and adjust seasonings to suit your taste.
