I’m not usually a big fan of rice or cream-of-chicken soup (you can easily make your own cream-of-chicken substitute), but this recipe is phenomenal. I devour it faster than I can serve it, and my husband often goes back for four or five helpings—no idea how he stays so slim!

The Best Hawaiian Haystacks

Of all the recipes I have tried, none come close to this creamy chicken topping.
Ingredients
- 2 cups chopped rotisserie chicken
- 2 cups sour cream
- 2 cans cream of chicken soup (or homemade substitute)
- 1/2 cup milk
- 4 cups cooked rice
- Toppings
- Shredded cheese
- Chow mein noodles
- Pineapple chunks
- Green onions, sliced
- Raisins or craisins
- Diced tomatoes
- Shredded coconut
- Cashews
Instructions
- In a saucepan, combine the chopped chicken, sour cream, cream of chicken soup and milk. Heat over medium, stirring frequently, until the mixture is warmed through and smooth.
- Scoop cooked rice onto plates or into bowls.
- Ladle the warm chicken mixture over the rice.
- Top with your favorite toppings such as shredded cheese, pineapple, chow mein noodles, green onions, raisins, tomatoes, coconut and cashews.
- Serve immediately so the toppings remain crisp and the dish is hot.
