I first adapted this version after seeing a similar recipe on Felicia Fitness’s channel, then adjusted ingredients and portions to suit my preferences and Weight Watchers points. Unlike older taco pie versions that used crescent roll crusts, this recipe keeps the points lower by using lean ground beef (or turkey), low-sodium seasoning and thin carb-count tortillas. The result is hearty, easy to slice and great for leftovers.

  • 1 (1 oz) packet low-sodium taco seasoning
  • 1 (15 oz) can crushed tomatoes (choose no-salt-added if available)
  • 1 1/2 cups frozen corn (or fresh corn kernels)
  • 6 — 6″ tortillas (La Banderita Carb Counter, Ole Extreme Wellness, or similar)
  • 1 cup fat-free shredded cheddar cheese
  • Green onions for garnish (optional)

How to make Taco Pie

Step 1: Preheat the oven to 350°F (175°C). In a large skillet over medium heat, brown the lean ground beef with the chopped onion. Once the beef is cooked through, stir in the taco seasoning.

Step 2: Add the crushed tomatoes and the frozen corn to the skillet. Reduce heat and simmer for about 5 minutes, stirring occasionally, until everything is heated and well combined. Taste and adjust seasoning if needed.

Step 3: Spoon 1 cup of the beef mixture into a round 9-inch pie plate or small casserole dish to form the base. Layer three tortillas over the beef to make the first tortilla layer. Spread another 2 cups of the beef mixture on top of the tortillas, then sprinkle with 1/2 cup of the shredded cheese.

Step 4: Add the remaining tortillas to cover that layer, top with the remaining beef mixture, and cover the dish tightly with aluminum foil. Bake for 25 minutes. Remove the foil, sprinkle the remaining 1/2 cup cheese on top, and bake uncovered for 5 more minutes or until the cheese is melted and the pie is bubbling around the edges.

Step 5: Let the taco pie rest for a few minutes, then cut into 6 equal slices. Garnish with sliced green onions if desired and serve.
