Turkey and Vegetable Sausage Rolls Recipe — Homemade & Flavorful

Who says a sausage roll must be made with beef?

This recipe takes a different route, using lean, flavorful turkey mince and a secret ingredient that keeps the filling moist and slightly sweet.
Both kids loved these turkey sausage rolls. With hidden grated vegetables, they make a quick, well-rounded meal the whole family will enjoy.
You can easily double the mixture for leftovers. I challenged myself to make two meals from 500 g of turkey mince; the other was a turkey and lentil spaghetti bolognese.
INGREDIENTS
250 g turkey mince
1/2 carrot, grated
1/2 zucchini, grated
1/2 onion, diced
2 cloves garlic, finely chopped
1/2 cup cranberry sauce (the secret ingredient)
Salt and pepper, to taste
Optional: finely chopped fresh parsley
2 sheets frozen puff pastry, thawed
METHOD
1. In a large bowl, combine the turkey mince, grated carrot, grated zucchini, diced onion, garlic, cranberry sauce, salt, pepper and parsley if using. Mix thoroughly with your hands until the mixture is even and holds together.
2. Cut each sheet of thawed puff pastry into four squares. Place a golf-ball-sized amount of the turkey mixture in the centre of each square and roll the pastry to enclose the filling. Repeat until all the mixture is used.
3. Arrange the sausage rolls on a lined baking tray and lightly spray or brush with oil.
4. Bake in a preheated oven at 200°C for about 20 minutes, or until the pastry is golden and puffed.
Serve warm with a simple salad or enjoy them on their own.
Makes: 6–8 sausage rolls
Store in an airtight container in the refrigerator for up to 3 days. They’re also great for packed lunches the next day.
