Lately I’ve had more tomatoes than I know what to do with. We’re happily overwhelmed—my little boy eats tomatoes more readily than most other fresh vegetables, and even my husband, who often removes veggies from his burger, has become a fan.

They’re fantastic, but like avocados, they don’t last long—use them quickly. Besides making large batches of tomato sauce to freeze, I make a variety of simple tomato salads. This tomato-and-mint version is one of the easiest and most refreshing.

How To Make Tomato Salad

This salad couldn’t be simpler. If you can wash and chop, you can make it. Follow these steps:

  • wash the tomatoes and mint
  • peel the onion
  • chop the vegetables
  • combine everything in a bowl
  • drizzle with olive oil, season with salt, and garnish

You can add a splash of lemon juice if you like, though ripe tomatoes often provide enough acidity on their own. The whole process takes about 10 minutes and leaves minimal cleanup.
