With a second baby, my mornings are busier than ever—getting myself ready, dressing the kids, feeding the baby, and making breakfast for everyone leaves little time to prepare lunch. I love chicken salads, and these Peanut-Sauced Chicken Pitas are a favorite for two reasons: they’re slathered in peanut sauce (which I adore) and they come together quickly. If you plan to make them multiple times in a week, prepare a larger batch of the peanut sauce and keep extra chopped vegetables stored in the fridge for faster assembly.
These pitas are great on their own, but the chicken-peanut mixture also works wonderfully on a bed of greens or simply eaten with a fork.

Peanut-Sauced Chicken Pitas

These easy peanut chicken pitas are made with fresh vegetables and a simple homemade peanut sauce — a perfect, quick lunch option.
Ingredients
- 2 tablespoons peanut butter
- 1 tablespoon rice wine vinegar
- 1 tablespoon low-sodium soy sauce
- 1/2 tablespoon honey
- 1 cup shredded skinless, boneless rotisserie chicken
- 2 tablespoons diced red bell pepper
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons shredded carrot
- 2 tablespoons chopped peanuts
- 1 (6-inch) pita, cut in half
Instructions
- In a small bowl, whisk together the peanut butter, rice wine vinegar, soy sauce, and honey. Set the sauce aside.
- In another bowl, combine the shredded chicken, diced red bell pepper, chopped cilantro, shredded carrot, and chopped peanuts. Stir in the peanut sauce until everything is well coated. Spoon the mixture into pita halves and enjoy.
