After returning from a week-long trip to Michigan, I found a package from General Mills on my doorstep containing the entire Monster Cereal collection. It was a free sample, but I couldn’t resist using the Boo Berry cereal to make donuts. Maybe it was because we ate donuts every day on vacation, or maybe I was just hungry at that moment—either way, donuts were the obvious choice.

Ingredients

  • Frying oil (I use vegetable oil)
  • 1 package (16.3 oz.) Pillsbury Grands! Blueberry Biscuits
  • 4 oz cream cheese room temperature
  • 2 Tablespoons milk
  • 1 ½ cup powdered sugar
  • 2 ½ cups General Mills Boo Berry cereal

Instructions

  • Pour vegetable oil into a heavy-bottom skillet or Dutch oven to a depth of about 3 inches. Heat over medium-high until oil reaches 350°F (175°C).
  • While the oil heats, remove the biscuits from the package and separate them on a cutting board. Use a small biscuit cutter or the top of a milk carton to cut out the center hole; save the centers for donut holes.
  • Fry 2–3 donuts at a time for about 1–2 minutes per side, maintaining an oil temperature between 350°F and 380°F. Use a slotted spoon to transfer donuts to a paper towel–lined plate to drain. Finish by frying the donut holes.
  • While the donuts cool slightly, prepare the icing. Beat the cream cheese with 1 tablespoon of milk until smooth. Add the powdered sugar and the remaining tablespoon of milk, then beat until creamy and spreadable.
  • Spread the cream cheese icing on each donut and immediately sprinkle with Boo Berry cereal so it sticks. Serve right away for best texture and crunch.
