Vegan Bagel Sandwich Ideas: Flavorful Plant-Based Breakfasts

The Ultimate Vegan Bagel Sandwich | Well and Full

Hello everyone — long time no talk. I’m a bit nervous to write this because I’ve had a rough stretch with the site, but I wanted to share what’s been happening and why I’ll be slowing down for a bit. I hope anyone with experience or advice can chime in.

In early March I moved to a new town with a friend, which was a big adjustment on its own. During that same week I discovered my website had been hacked. I still don’t know how, but there was a user in my dashboard that I hadn’t created and someone had logged into the backend. It felt like discovering an intruder in your home — a real, visceral violation. This blog has been a companion through nearly three years of my life, so seeing it compromised was devastating.

That incident kicked off a series of security checks and changes. I migrated to a more reliable host, installed a firewall, and set up an SSL certificate. Unfortunately, the process involved several site crashes. Every time I visited the URL and saw a 404 or downtime notice, my heart dropped. Although things currently seem stable, I’ve learned how fragile a site can be and how a small change can trigger a problem.

Honestly, dealing with this has made me question whether I want to keep blogging. It feels overwhelming. No matter how many security measures you take, there are always more avenues for attackers to try. I’ve invested years into this site, and the thought of ongoing stress from potential hacks is exhausting.

Despite that, I’m still drawn back here — which is why I’m sharing a recipe today. Food and sharing recipes remain close to my heart, so I’m not ready to walk away completely. Going forward, I plan to work at a much slower pace. On top of the website issues, some health problems I thought were resolved have resurfaced, so I need to slow down and take better care of myself.

Sending hugs and bagels to you all <3

The Ultimate Vegan Bagel Sandwich

This is a simple, customizable vegan bagel sandwich — creamy, fresh, and perfect for breakfast or brunch.
Prep Time 10 minutes
Total Time 10 minutes

Ingredients

  • Bagels — as many as you need
  • Vegan cream cheese
  • Avocado, sliced
  • Red onion, thinly sliced
  • Tomato, sliced
  • Sprouts, microgreens, or greens

Instructions

  • This is more of a DIY sandwich than a strict recipe. Toast the bagels if you like, spread a generous layer of vegan cream cheese, then pile on the vegetables. I love the combo of red onion, avocado, tomato, and microgreens. If you prefer cooked toppings, sautéed onions or mushrooms are delicious additions.
