Black Bean Breakfast Taco

Ingredients:

Butter for frying the eggs
Eggs
Sliced avocado
Corn tortillas (4″)
1 can drained black beans
Jalapeño, sliced

Pico de Gallo Ingredients and Directions:

6 large tomatoes, seeded and diced
1 sweet onion, diced
Juice of 2 limes
2–3 tsp salt (to taste)
3/4 cup chopped cilantro

Breakfast Taco Instructions:

Seed and dice the tomatoes and onion; finely chop the jalapeño. Combine tomatoes, onion, jalapeño, lime juice, cilantro, and salt in a bowl. Mix well and refrigerate to let the flavors meld.
In a skillet, melt a tablespoon of butter. Cook eggs sunny-side up and season with salt and pepper.
Lightly char the corn tortillas over an open flame or in a cast-iron skillet for added flavor.

To assemble, top each warmed tortilla with black beans, a fried egg, pico de gallo, sliced avocado, and jalapeño to taste. Serve immediately.

Tip: For easy meal prep, combine the pico de gallo with the black beans and jalapeño ahead of time—store in an airtight container in the fridge and assemble when ready.
