At her bakery, Kate focuses on a single signature wedding cake: the French Crepe Cake. Each crepe is made fresh using clarified butter, high-quality flour, farm-fresh eggs, and a few secret touches. The result is completely nontraditional and unforgettable. The stacked crepe layers create a subtly ruffled, romantic appearance that feels both timeless and modern. Below, Kate shares some of the inspiration behind this cake.

“Crepes have a special place in my memory. My grandmother would make them, and when she returned from trips to France she would tell me about the incredible crepes she’d tasted. That memory made this cake meaningful to me. I was given total creative control with the brief to ‘make it look amazing and one of a kind,’ and I set out to do exactly that.”

“My inspiration in three words: Lady M Confections, New York. I’ve been a huge fan of their work, and I remember seeing a version of the crepe cake featured on Martha Stewart’s show—so that was my second introduction to the concept.”

Kate’s first attempt at her signature cake was a learning experience.

“My first try was a disaster — I nearly burned myself badly and ended up with only a handful of floppy crepes from a batter that should have made fifty perfect rounds. I kept going until the next day, when success arrived: fifty beautiful, light, buttery, golden crepes. Presenting the finished cake to my family was unforgettable.”

Kate describes her crepes as sweet, light, buttery, and golden. Fillings vary to suit different tastes: vanilla pastry cream infused with Madagascar vanilla, Limoncello lemon curd, dark chocolate pastry cream, and whipped cream with dark chocolate shavings. Each slice highlights the craftsmanship of the delicate layers and presents beautifully plated for weddings and special events.
