One year ago today we sat together in Gretchen’s kitchen, counted to three, and nervously clicked “publish” — sending our very first post, Quick and Healthy Snack Bites, out into the vast world of the internet.
That moment followed more than six months of preparation: late nights choosing a blog name, pairing fonts, and learning the basics of HTML markup. It felt overwhelming and exciting all at once.

When we finally hit publish, we squealed, cheered, and did a happy little dance. Then we sat back down and watched the screen for comments and likes, delighted by every notification. And that’s how it began.
Over the past year we’ve cooked more than ever, learned new skills that made our heads spin, and yes — we’ve made enough messes to declare war on each other’s kitchens (repeatedly).

We’ve calmed our nerves and had a total blast speaking to groups in our community — from preschool moms to Girl Scout troops — about nutrition, picky eaters, and making healthier choices in the kitchen.

We’ve baked muffin after muffin and shaped countless snack bites for charity events. We even caught a bit of time with our culinary hero Alton during his tour — hilarious and inspiring.

The best part of this whole journey has been spending time together. THK gave us a reason to become closer friends while doing something we love. We shared countless laughs, late-night recipe tests, and kitchen experiments — some successful, some messy, all memorable.

We also enjoyed family moments: running a 5K with our daughters as part of their Girls on the Run program and preparing for another race next month. Our husbands cheered us on too, surprising us with flowers and THK swag when milestones rolled around — small gestures that meant a lot.

Most importantly, we’ve loved sharing THK with you. Your comments, shares, and encouragement helped this project grow — and for that we’re deeply grateful. This first year has been full of joy, laughter, learning, and connection.
To celebrate our blog’s first birthday, we wanted cake — but we also remembered the timeless advice: don’t bake your own birthday cake. So we turned to friends in the blogging community and let them do the baking for us.
Instead of one cake, we present ten tempting cakes — all healthier takes on indulgent desserts. We searched widely and chose recipes we can’t wait to try, staying true to THK’s focus on better-for-you ingredients when possible. Yes, birthday cake is indulgent, so a little butter or sugar snuck in here and there — and that’s okay. These cakes strike a nice balance between decadence and mindful ingredients, and most aren’t overly difficult or time-consuming.
